: The whole meal :



Cilantro lime chicken


2 Tbsp lime juice (one lime juiced)                    4 Tbsp. olive oil
zest of one lime                                                  salt and pepper
1 Tbsp chopped cilantro                                    4 chicken breasts
2 cloves garlic, minced

Mix all ingredients together to make a marinade.  
Marinade chicken for 1-3 hours and then grill.  
Top with avocado salsa. Recipe follows.



Avocado salsa


2 avocados (1 mashed, 1 cubed)                       1 Tbsp chopped cilantro
3 Tbsp chopped onion (any kind)         1 Tbsp lime juice
1 jalapeno, seeded and minced                         1 clove garlic, minced
1 diced tomato                                                   salt to taste

Mix together and serve on top of chicken.

You'll feel healthier just eating this meal, and it's so yummy!
I served it with jalapeno rice, which i love, love, love.

Jalapeno rice

1 cup instant rice                                            1 can cream of celery soup
1 cup sour cream                                            1 cup shredded Cheddar cheese
1 can diced jalapenos                                      

Mix all ingredients together.  Pour into an 8x8 pan sprayed with cooking spray.
bake at 350 for 25-30 minutes.
